Tojiro knives – Tojiro Senkou Knives -These Japanese Tojiro Senkou knives have extremely sharp blades, and are Heston Blumenthal’s favourite knives. The apperance of these Tojiro Senkou knives is enhanced by beautiful damascene blades and hard wearing handles made from Micarta and 18/10 stainless steel making the handle feel comfortable in your hand.
Tojiro Senkou knives have up to 62 layers of steel in them which produces a cushioning or damping effect to the knife making it extremely sharp and powerful. These layers are made by folding a number of leaves of steel with different properties around a core of VG-10 steel.
The Tojiro Senkou knives have been made so they feel perfectly balanced in any hand, whether you are a chef or just starting to learn to cook. The outer layers of the blade are made from stainless steel which is extremely resistant to rusting, staining or pitting (however you should still always wash and dry your knives after each use).
